building summer projects to use in resume and recruiting

I just finished my freshman year studying STEM at a target school in Canada and I've decided I want to pursue S&T. I dont have an internship this summer so Ive been working on building summer projects to have something on my resume. Two main projects right now are:

  1. A trading algo thats focused either on a market segment or something related global macro
  2. A paper portfolio where i can showcase risk management and stock pitching. This is just so recruiters can see that im interested and have some bullet points on my resume.

Im wondering if recruiters care about personal projects? If so, do you guys have any recommendations on how to talk about them so I dont come off as an ass or a know-it-all, but still come out seeming a bit knowledgeable?

I dont have any finance related experience so I was hoping I could use these projects as a stepping stone.

Yes some people will care as I've been asked abt my trading projects in interviews. Just be humble with your response, say obviously you didn't generate alpha, but it helped you get more comfortable and get a general sense of how to clean/work with financial datasets in Python while applying some ML techniques. They'll ask follow up questions if they want to hear more specifically abt the experience and what else you learned from it. On your resume, be sure to mention the specific libraries and tools you used for the project and some metrics of "success"
