I would get rid of the leisure section and expand on your internships. It is always best to use numbers and quantify your experiences in some way.
Another question: is it better to use "summa cum laude" or "the greatest distinction" to mention the obtained honours? In other words, which one is the most recognized and impacting?
Also, does it sound "cocky" to put ranked 1st or valedictorian on a resume? What would be the best way to mention it?
I would definitely not say so. Valedictorian is a great achievement, I'd say just try to subtlely include it as a bullet point in Education.
Most of my dislikes for the resume are pretty stylistic. I would capitalize the letters of all headers (or at least of both words in the header e.g. Additional Education). I also think the "activities and other achievements" section takes up way too much space without contributing an awful lot. You could use that valuable space to describe some of your ECs or leadership experience. If you really feel those awards make you stand out, why not condense it into a couple lines in a comma list format?
Lastly, you frankly have too many headers. Interests/languages and skills/awards can be lumped into one.
