Banks and University Course on Transcripts

Hey so I'm in 2nd year and my course selection is coming up and I have 8 required business classes that I need to take (Which already include 2 Finance, 2 Stats, 1 Accounting and other math and finance heavy classes). And too boost my gpa I was thinking about taking some easy courses (Theatre, History or something like that) 

I was just wondering if employers or hiring managers will care about those "easy" classes that I took when they look at my transcript when I apply for internships next summer? And will they discredit my application if I take these courses to boost my avg?
