I know nothing about excel and I am terrified
I got an offer for an S&T SA role but I know nothing about excel. I am an econ major at a non-target and all of my classes use literally any software but excel which is annoying. So my two questions are -
1. How worried should I be with bare knowledge of excel?
2. What can I start doing now to get a little better at excel before I start my internship?
for me excel was pretty easy to pick up on. Even youtube videos of basic functions are helpful to watch

Corporate finance institute has some decent courses on excel
You need not worry. Excel can easily be learned. BIWS course is very good, but IBD specific. WSP course is a good all rounder with many examples.
