Job Interview "Homework"

I have an interview for an asset management position at a company that owns a bunch of shopping centers. Basically, I was told to research Target and this mid-sized restaurant chain from the perspective of assessing their viability as a tenant (ie credit risk, general financials, etc). The only thing is that the restaurant chain is a private company so it's hard to really get any info on it. I've managed to find some articles on their latest equity funding but it doesn't really say anything other than the size of the investment and some details about their loans - nothing about the financial health of the company or their growth. 

How should I go about getting more info on this? It really only needs to be a quick one-pager on the two companies.
