Incoming ft at EB. Can't help but notice most of the people in my group that go to MF/HF are Diversity. Is that a sign that these places prefer Div Candidates? Should I focus on UMM/MM Funds instead?

Can't speak on this but what resources did you use to prep for the GMAT and how long did it take you? That's an extremely impressive score. Feel pretty confident that you could easily secure top interviews with those credentials but I'm just an intern so I'm not qualified to offer good insight on this.
Been casually prepping junior spring and ramped up senior fall. It helped I graduated a semester early and was able to solely focus on test prep. Used official guides and hand downs from people who used Manhattan prep
MFPE has a preference for diversity, but the majority of spots still go to non-diversity candidates so don’t let that defer your from shooting your shot.
Yes, being diversity helps, but if that's stopping you from pursuing the funds you want then you have the wrong mindset. You're clearly smart, so go for it.
