Saying your grades are mediocre when you are averaging an A- makes me want you to fail. That's a 3.7 GPA, come on. Have you considered networking?

...

I am in the same boat as you minus the target school and the equity research experience. I would honestly recommend networking Obviously you could focus more on grades and get relevant extra-curriculars (student-run investment fund, etc.) but networking provides a better payout. I go to a non-target and almost all of the alumni from our school working in IB have networked their way in despite having stellar GPAs.

My suggestion? Try to find a way to find an off-cycle boutique internship. Distance is fine if you have the option to get some credits online or get course credit for your internship( required if unpaid in the US, not sure how that works in Canada)

Making that happen is largely a matter of brute-forcing your way in by cold contacting boutiques, unless you get lucky and have a connection in common.

Canada IB is pretty brutal on GPA requirements. Almost all the kids getting interviews are 3.7+ minimum. A couple 3.6 candidates may slip in there, but even in the interviews, the interviewer will grill hard if you have less than a 3.7 at least. Dunno why this is, but a couple associates at my firm transferred from the Toronto offices and commented on how much lighter we are here in NY with GPA requirements

That almost never happens. NY almost exclusively takes analysts from US target schools. As much as firms talk about being global, it really only matters when you're actually in the firm and can transfer over later to HK or London offices if that is your interest.
