Had a great interview today where everything went well and we really hit it off, except after the paper LBO IRR calc, I accidentally said 28% IRR on 2.5x CoC instead of 20% IRR on 2.5x CoC.
Do I acknowledge this minor error in my thank you email (e.g., PS And, as soon as you left the room, realized my mistake on IRR - chalk it down to interview nerves)

I would advise against it because it makes you look desperate and depending on your interviewer, they may find it extremely annoying. (I know I would)
