at what point do you stop contacting HR after interview?

Let's say that you had a phone interview with HR. It wasn't my best and HR told me that I'd hear back around the first week of January after people got back from the holidays. I didn't hear anything back (as expected) so I called her and left a VM. I don't have her email address. How many more times should I call to try to get an answer? I'm obviously very interested in the position and interviews are difficult to come by in this job market.

Don't irritate them. Something you should know about HR is that they take forever, you are not the only candidate they are working with, and assuming its a big company they got multiple positions they have to fill, many of which are more important then yours. Don't contact them this week or next week due to MLK holiday. I'd wait until the end of January.
