Going back on an accepted SA offer

With early recruiting on my mind this question came up, what's stopping a sophomore in college from accepting a SA position and then going on and continuing with recruiting and taking interviews? Obviously this is poor practice, extremely dishonest and will probably come back to bite the person, but is there anything legitimate stopping someone from doing this? What would happen if this person went on to take another offer and go back on the original firm? Has anyone seen this happen before?

disclaimer: not considering doing this at all, only a rising sophomore, but I am curious
