How do interviews over drinks work?
I feel like this is never talked about, but what is the rule if an MD invites you to get drinks instead of a coffee for one of your interviews/meetings before the offer? . Are they seeing if you will only drink one or two? Are they watching to see if you’ll match their drink/amount of drinks? Will they think you’re susceptible to drinking too much if they order many drinks and you do as well? Am I over thinking this? What are they looking for here?
Based on the most helpful WSO content, interviews over drinks are often less formal and more about assessing your fit within the company culture. Here are some key points to remember:
The interviewer is likely trying to gauge how you behave in a social setting. They want to see if you're someone they'd enjoy working with on a day-to-day basis.
It's not a test of your drinking capacity. It's generally a good idea to match their pace, but know your limits. You don't want to appear out of control or unprofessional.
If the interviewer orders an alcoholic drink, it's usually acceptable for you to do the same. However, if you're uncomfortable with this, it's perfectly fine to order a non-alcoholic drink.
This is not a typical interview, so bringing resumes or notebooks might seem out of place. However, having a pen and a small piece of paper in your pocket to jot down important points after the meeting could be useful.
While it's a more casual setting, it's still an interview. Be prepared to discuss your experiences, why you're interested in the firm, and the position you're applying for.
Lastly, remember to relax and be yourself. The interviewer wants to get to know you better, so let your personality shine through.
Remember, the goal is to show that you're not only qualified for the job, but also a good fit for the team and the company culture. So, while it's important to be professional, don't forget to let your personality shine through.

I think you might be overthinking this. If you just do what the MD does, you should be golden.
On a less serious note, I have daydreamed about this exact scenario far more than I should have. I would probably start the interview on a serious note, order a glass of wine or a classic cocktail to start. If the interview goes well, end it after one or two drinks and stay professional so you can hopefully continue the process. More fun though, if it becomes clear that this is not a fit, I would order an absolutely nonsensical drink with a complete poker face just to see what the MD does. Say something like "I'd like a jager bomb, served up and with a twist" or "I'll have a virgin boilermaker" (tell them to just use iced tea and O'Doul's when the server gives you a blank stare back). You have to practice this in advance in front of the mirror to make it look completely natural. Good luck.
