How do interviews over drinks work?

I feel like this is never talked about, but what is the rule if an MD invites you to get drinks instead of a coffee for one of your interviews/meetings before the offer? . Are they seeing if you will only drink one or two? Are they watching to see if you’ll match their drink/amount of drinks? Will they think you’re susceptible to drinking too much if they order many drinks and you do as well? Am I over thinking this? What are they looking for here?

On a less serious note, I have daydreamed about this exact scenario far more than I should have. I would probably start the interview on a serious note, order a glass of wine or a classic cocktail to start. If the interview goes well, end it after one or two drinks and stay professional so you can hopefully continue the process. More fun though, if it becomes clear that this is not a fit, I would order an absolutely nonsensical drink with a complete poker face just to see what the MD does. Say something like "I'd like a jager bomb, served up and with a twist" or "I'll have a virgin boilermaker" (tell them to just use iced tea and O'Doul's when the server gives you a blank stare back). You have to practice this in advance in front of the mirror to make it look completely natural. Good luck.
