What pairs well with economics degree?
I just got accepted to University of Michigan as a transfer student from community college. I still have time to officially declare my major but I'm set on economics because it's interesting and marketable.
To compliment that, I would like to minor in something that is relevant and marketable. My top choices for minors right now are: Statistics or Computer Science. There's also a sub-major in "Mathematics of Finance and Risk Management" which I believe is just a Math Major that is focused in on finance.
Any advice is appreciated!
Statistics. And then learn to code in Python on your own in your spare time. If you graduate with those three skills there will be no shortage of job options for you.

There's already an abundance of CS majors. See, the problem with most CS undergrads is that, by and large, they're all the same. You take any freshly-minted CS grad and you (1) test them on some Java (because every CS program teaches Java) and (2) you test them on some silly CS models like sorting algorithms and (3) you hire them if they pass that. Where they went to school doesn't really matter, they all basically know the same things. You also have to temper their silly enthusiasm, "I wrote a compiler for my junior project!!!" (because every CS program makes you write a compiler). "Ummmm, yeah, we got compilers covered, it's called Microsoft, maybe you've heard of them?".
So, if I was in your position, the last thing I would want is a CS degree, avoid that at all costs. Learn python with useful libraries like pandas, scipy, numpy, etc and you'll have plenty of interest in your skills where youre ready for FTE.
