I guess for riches you could also say UFC, but that takes way more of a hit on your body than soccer.
I would argue MJ is more famous than Tom Brady. Absolutely everyone in America has heard of Michael Jordan. Everyone.

Formula 1 for sure. Fame, money, 20 races a year in a new exotic location each time. Now I know the F1 Champ isn't going to be as well known as tom brady in america or the top football player in europe (unless you get to schumacher level) just due to the demographics that watch each, but all the people i'd want to be famous with would know who the F1 no.1 was.
I would have to go with Tennis.
1. NFL & MMA/UFC are great, but I wouldn’t be willing to risk the chance brain damage.
2. I don't like team sports, so my options would be limited to Tennis, Ping Pong, Golf, Running, MMA etc. Out of those I like tennis the most.
3. Since I would be the best in the world, even topping Federer and Nadal, I would be winning a lot of prize money, and raking in even more through endorsement deals.
Yes, this doesn't come close to what some footballers or soccer players make off a contract, but it would still be more than enough for me.
4. Nice travel. US Open, French Open, Australian Open, Wimbledon are all in nice places. Plus since I can have control over where I practice in my off-time, I would probably go live in Malibu and have a tennis court built on my property that overlooks the ocean.
5. Top tennis players often have very loyal fans.
I'd go with F1. Badass cars and you can make lots of money.
F1. My only issue with that sport is you have a higher probability of death compared to others.
Women's beach volleyball (I'm a man)
Golf or surfing for sure. Make enough money that you never have to worry about anything, and basically be as famous or incognito as you'd like.
Plus you can do it until you're old.
Yeah to rip at surfing would be awesome.
I saw Kelly Slater compete in the Billabong Pro in South Africa in 2006 and got to meet him too.

I'm fairly risk averse so I would go with the sport that has the lowest risk of getting injured. Golf to me seems like a near 0 risk of even getting injured temporarily, much less permanent disability or death.
