don't leave the internship off, you can leave the senator off. I know someone personally who worked for a senator and it opened up all sorts of opps, but their name got dragged through the mud later as scandal inevitably finds all politicians.
if they ask, you can say you chose it not because the person aligned with your beliefs, but for the once in a lifetime opp to work with a senator. maybe your senator is a great one, maybe your state has only ever had republican senators but you didn't care because your guy was chair of the intelligence committee, the finance committee, or something interesting that you wanted to learn more about.
I campaigned/interned for a certain mormon presidential candidate and just said "Internship with Presidential Campaign, 2012". I think one person asked and I said who but they didn't pursue it. I believe it is illegal for them to discriminate on a political basis so you don't really have to answer, although in today's world that might be all you need to say to tip them off.
I have friends that work in DC or have worked in DC for both political parties. At least in that sphere, it's not important which party you intern with in college, just that you have experience. You can be a D and intern with an R if that's what you can find and the experience is still valuable when looking for a post-grad D job and you won't have that counted against you. Note that progressives may discriminate since that's kinda their thing.
I would leave off the senator name and mentioned above so HR doesn't have the opportunity to discriminate against you, but if asked about it in the interview DON'T backtrack or make excuses. At that point, you just look like a pussy and shouldn't be ashamed of taking advantage of a great opportunity.
I interned on Capitol Hill as well, just say US Senate and the nature of the work. Do not say who you worked for.
