I'm no expert when it comes to resume construction, but the format looks solid. Two questions I would ask are: as a minor in Mandarin and with experience at a Chinese firm, couldn't you list Mandarin Chinese in the languages section even if it's just an elementary proficiency or such? And do you perhaps have a .edu email address that you can use? I have heard that listing a .edu address helps to clarify to recruiters that you are still in school.
Just my two cents, hopefully this was of some help and somebody more knowledgeable than myself will come along shortly to give you some deeper insight.

To be fair, though, I do work roughly 40 hrs/week at a restaurant (to pay for tuition) and I was hoping this might explain that gap somewhat to interviewers. Do you think that is reasonable at all?
I think that is reasonable and I really respect that (might be a better story than someone who is really involved with EC's). But the issue is you have to get to an intv first to tell that story.. Your resume doesn't explain 40hr a week workdays + FT classes.. I would include one or two EC's even if you don't hold a substantive leadership position to just round it out a bit more
Looks good, but main critique would be the same point everyone gets: Try quantifying your result e.g. ~%,$ etc. but otherwise, nice CV!
I would list either cumulative or major GPA, but not 'Sophomore, GPA'. I realize that you are clarifying that you're a sophomore, but the 'Sophomore' looks awkward next to GPA.
Also, you use the default | from the M&I template to separate your contact info, but use commas throughout the rest of the resume. I'd pick one and be consistent with it.
