You'll get plenty out of the regular track, the math track only makes sense if you have some deep and abiding interest in it. If not, then do the non-math version.
Good question -- I'd like to know more out of this as well. How much do employers scrutinize the "relevant coursework" section on your resume, and would it ever be brought up in an interview? I feel like getting asked why I didn't take the "harder" Econ courses would tilt me.
I would go the math, but still be sure to have liberal arts courses in your background. Go with the math mainly because then you can go for the more technical roles with better job security/stability. And by then your school name AND math experience will help you smoke the MFEs.
