I would 100% take entry level financial accounting regardless of what you major in.
Also, a double-major in Econ and Poli Sci/Public Policy would be easy as hell given both majors have lay-up elective courses. If that's off the table at least do an Econ minor. If you're at an Ivy it's probably not going to cock-block you but if you're at a UVA/UMich type of target I think you're going to want an Econ/Accounting background to stand out.
If you aren't interested in studying Econ/Finance why are you sold on it as a career choice? There are a lot of financial economics courses that a good school will offer and some even offer concentrations of Economics related to finance/markets/econometrics
I enjoy classes that discuss real financial markets and have something tangible to them. Drawing supply curves and discussing economic theories that have no standing in the real world is far less interesting than other avenues of study in my eyes.
Was in your same position last year and did the switch and everything still turned out fine. I got my SA offer as an Econ major but switched right after to a Politics major and everything went fine. Go for it. My courses in Politics were more interesting and I was able to actually enjoy what I was taught.
What matters is how you sell the story and being compelling. If you are a music major, you better have read a ton and shown interest outside of school. People might be more skeptical if you are polisci, but if you can explain why you chose it and why despite choosing that you are set on banking you will be fine.
That said, probably 1/10 kids can actually explain why they want to do banking or craft a cohesive story about how they got to the point of an interview.

Sounds like you should switch to a finance major then. If you want theories with even less relevance to the real world, go to poli-sci.
