Long story short, my parents are not very fond of me studying Economics at uni, and I am good at quant subjects, so they want me to go to TU Delft BSc in CS. Will IB be very hard to get into from there, and what is the most common path for non target STEM majors? After the BSc I would probably self finance a masters in management or finance.
BTW, I don't speak Dutch.

Definitely possible, seen a couple guys and girls in top BBs who made it from TUD. They speak Dutch though but over half of them are placed in an industry team, so not Benelux coverage.
Not sure if CompSci will be the best study in that regard. More common is Engineering or similar
Why not study Econometrics at Erasmus? TU Delft is a really good school nonetheless
I confirm TU Delft is a fantastic university but more for engineering. For economics, Erasmus is the place the to go :)

I was in this situation many years ago, and chose an engineering school in part because my social circle had very negative preconceptions about business schools and related studies. My advice would be to steer clear of engineering school if you already know you want to end up in finance. Whilst the transition is possible, you will have to work much harder at school (CS is no joke) and you won't have a great alumni network or community to support you through the process (really key to be clued into processes and the general recruitment cycle), mainly because engineering students are completely uninterested in IB. Also the gender ratio in engineering is horrendous and social life is particular to say the least. The only thing you will be missing out on is actually getting good at problem solving and using your brain for a while which does have longterm benefits.
Also don't mean it in a bad way but regarding careers do not take advice of anyone above 40 (including parents). I understand the desire to make them proud, but I am sure you can rally them to your cause and study business (RSM is a great school).
While TUD is a great university to study at, I'd definitely take a serious look at RSM and ESE (both Erasmus University).
You'll get a lot more exposure to (investment) banking via campus recruitment events, the investment society, and much more.
I have seen a bunch of TUD alumni end up in investment banking, but it's not a usual path to say the least.

Seen a lot of friends of mine ending up in IB from the TU Delft. For myself secured an offer at a large asset management firm for the summer in London. Still no IB but at a BB. So it is doable from studying in Delft from personal experience.
They have a good finance minor as well and if you complete the BSc at the TU you could switch to a MSc econometrics at the Erasmus University quite easily and focus on quantitative finance.
You can easily find an investment banking job from TU Delft. It is a great university and if you have done like an internship or other finance related stuff (like the finance association of the uni) then you should not have any problems :)
