Dropping Minor After SA Gig (FT Offer Received)

Hey guys, 

I interned as a summer analyst this summer. Got the full time offer and thinking of dropping minor. I can complete the minor but, it is a STEM field and pretty technical so don't think it is worth putting time and energy into it. In case I decide to drop it, would that be a problem (most recent resume has the minor, and technically, I will be changing the info that I provided during hiring process, which is against the terms of the offer letter)? Do I need to communicate this to HR? My understanding is that I do not need to, but just wanted to confirm. Thank you.
