Getting a boutique internship as an exchange student

I'm currently doing an exchange semester (sophomore spring) at a US target school in the east coast, coming from a non-target school in the EU. As I'm a US citizen, I'm interested in seeking out a boutique IB internship for the coming summer anywhere in the EC. What's the best way to go on about this? How should I introduce myself in cold emails to be taken seriously?

For some context, I have decent EC's along with an accounting internship last summer, and a high GPA.
