How to get better at coffee chats?

Do more of them. Most first experiences are awkward.
Maybe spend less time having conversations with the monkey bot.
For sentence fillers and even rambling - intentionally practice pausing in everyday conversations. Recognize what words you use such as 'um, right, like' and do your best to condition yourself to stopping when you feel the urge to say them. If you don't know which you use, get a friend or record yourself to better understand what they are. Pausing helps in virtually every single area you mentioned in general conversation - and ten fold for public speaking.
As an aside - something that took me a long time to learn, and I've still not really internalized it, saying less is often allows you to say more. Listen to the other person, don't start thinking of the next topic/question/whatever while the other person is speaking.
Two other strategies you might focus on - asking more questions of the other person and having a 'goal' so to speak for the conversation. That is really important, IMO, as you think about coffee chats - what are you trying to convey about yourself, what are you trying to learn about the other person, etc.
A few tips that helped me: try to prepare a few key questions or topics beforehand so you can steer the conversation if you start rambling. Also, practice speaking slowly and pause a bit before answering—that helps cut down on fillers
