Coffee or fancy dinner it doesn't really matter - there's 0% chance they expect you to pay/split this. Lightly offer as a token gesture when it comes, they will obviously not let you, then thank them when they do inevitably pay. It just looks odd you trying to pay for someone who earns multiples more than you. Dance the dance and don't take it deeply.

Also you suggesting to change at this stage is just annoying. You were given the opportunity to demonstrate proactivity to select somewhere and didn't, don't make their life more complicated once they've then booked somewhere because you feel uncomfortable. This is a serious person you're dealing with, treat them with such respect.

 

Post text (I might want to edit or remove this later): Hi, I was selected to be mentored by a partner at a finance conglomerate, they asked to have dinner with me in NYC (I'm from the metro area). I didn't send a restaurant quickly enough because I couldn't think of a good restaurant and they booked one at a restaurant with maximum number of money signs according to Google Maps. I don't really feel comfortable since it seems super costly, and I wanted to ask to get coffee instead. What would you suggest I do, and any advice on making this request?
