what is the average total Compensation (Base + Bonus) at companies like PWP/EVR/Moelis? Don't account for COVID-19 since, by the time I join, everything will be back to normal (~2022).

EVR is 95 base / 85 bonus for 1st year analysts. Their signing bonus for returning summers was 35k to sign by a specific date, which is absolutely fucking absurd.
Evercore doesn't really bucket. Bonuses are generally within 5-10k of each other.
The $35K fulltime analyst signing bonus is only if you qualify for the "diversity scholarship". The normal singing bonus for the rest of us plebs is $22.5K-$25K depending on if you summered at the firm or not.

Yes, not including signing. General bonus range between 70%-120% of base depending on performance.
