Is it fine if I calculate my gpa based on the date I submit an application? Because recruiting takes place so early, my gpa during background checks would almost certainly be different. Would that discrepancy be understood by the banks?

You can use the most recently published grades from the ending term (if it was right now, then you can use Spring 2021, or if you took summer classes, Summer 2021). It can't be during your current term, because everyone would just be saying they're getting A's when their grades aren't finalized
Not sure I understand, what other GPA would you use? At the time of application you have 1 official GPA, all the other classes you are taking don’t have finalized grades, so they shouldn’t be a part of your calculation.
That being said, if you expect your GPA to change a lot (in the wrong direction) then it will be brought up and a bank could decide to pull your offer if you go from a “good” gpa to failing all your classes.

If you apply today, use your GPA as it is right now (so whatever you finished the spring semester with). Banks understand it will change a bit by SA 2022/23, your GPA just needs to be accurate as of the date you submitted. If you have a bunch of 4.0s about to post from this semester, then wait 2 weeks to apply.
You really shouldn't be "calculating" GPA fyi - use whatever official GPA your school posts on your student website.
No you have to build an LBO model and sensitivity analysis to determine what GPA you will have when they conduct the background check
