Getting an IB job coming from a non recruited school

I am an undergraduate at the University of Minnesota aspiring to someday work on Wall Street. I am tentatively pursueing a finance and accounting major; however, I am sophomore and have time before I make a final decision.

So far, I have had an internship doing equity research at a buy side investing firm. I am also doing an unpaid internship diong capital markets research. I am also interning a UNH as a corporate stategy intern.

What else can I be doing to get into the same selection pool as the candidates from the more prestigious universities?

Sounds like you're doing all the right things in order to build a strong resume. Just network, keep your grades high, network, make sure you secure a solid internship this summer, and network.

^^^^ Same as above, attention to detail is key in this business and no, it's not just a buzz word recruiters/employers like to see on your resume. It means check everything all the time to make sure it's perfect. If you're going to make spelling mistakes on your cover letter and/or resume, you're pretty much done before you open your mouth to speak. I know because I saw a kid come into the office a week or two ago for an interview who won't get called back. I talked to one of my MDs who interviewed him to see why and all he said was that "He's a nice kid but I found 1 spelling and 3 formatting errors on his resume..." Keep doing what you're doing otherwise and network you're ass off, might be worth a trek to NYC. Good luck!
