How to leave work for a coffee chat?

I might be overthinking this a bit, for reference I am NOT asking how to have a coffee chat, what to talk about etc. I have done a fair few as a student and I know my story, what questions I want to ask etc.

Quick backstory; Graduated from a non-target undergrad,  graduated in the middle of COVID and found it difficult to break in to IB/PE. Through tons of networking I managed to secure an internship at  a LMM PE shop in 2020 but there was no headcount so couldn't join the team. I decided to try breaking in to IB again in 2021 but couldn't manage it. I settled for a private credit role in early 2021 and kept networking. I messaged a banker (VP/Director level) at an EB rx group for a coffee chat (mid 2021) but that was rescheduled ~4-5 times due to COVID/general busy-ness (on his side). I've since managed to get a fulltime PE gig at a mid market PE shop (low comp for PE but that's another story) in late 2021. 

The question: Our coffee chat is now scheduled in 2 weeks time for ~30 minutes during the middle of the day on a Friday. How do I actually go about leaving the office? Do I just block it off on my calendar as busy and step out? Do I mention I have a meeting to my associate the morning off so nothing else conflicts? If anyone asks do I mention it's with a banker (I don't want them to think I'm jumping ship - I'm still fairly new and don't want to cause any issues). Am I just overthinking this too much? 

Yes I've searched the forum and cant actually find anything useful. Can anyone please advice on actually networking once you've got a fulltime job? It was a lot easier as a student asking people for 'advice over coffee' but now it feels weird to do it as someone who's already in a job.
