It's pretty much preference what kind of layout you get. Different people will swear by different layouts and even different banks will have different layouts (some ultra wide, some multi monitor).
Personally I'm a multimonitor guy. I prefer discrete screens (one for source material/messaging, one for excel/working tool).
Two or theee 24"s or two or three 27"s if you have the desk real estate. Some people like 2/3 24/27s with one/two vertical. Some people like a laptop as a third monitor. Some people do ultra wide + vertical 24inch. Think about how you like to work and what works. Chances are your monitor setup will change over time anyway.
For resolution, you'll want at least 1440p (which is hard to get on 24 inch but some brands do it). Refresh rate/Hz doesn't matter so much if not gaming. Higher is better ofc but not necessary.
As for brands, if you're not gaming and not doing graphic design, it's not that important what brand you get. Personally I'd select for minimal bezels, inputs (do you want HDMI, display port, USB integration, passthrough charging etc) instead of brand. Most big laptop brands will also have decent monitors - dell, Lenovo, HP. AOC is also a good one for good value.
If multimonitor, You'll probably also want to check that the monitor is able to daisy chain (needs a "hdmi out" port or "display port out") which means you can put one connection lead in one monitor and another between the monitors. If you don't have that option then you'll probably need a usb-c/thunderbolt dock which has multiple monitor inputs.
Also just add that if you're on zoom/teams a lot and need to share, the ultrawides aren't as intuitive to do. yes, you can share an individual "program", but the resolution for your co-attendees gets thrown off. if you're leading / sharing in meetings, having at least one discreet monitor that will allow you to do that tends to be better.
