What's the best way to retain information?

I have a tendency to overthink so excuse me if this is nonsensical.

I recently signed up for the Financial Edge IB Certification Course and I feel like I could be doing more. Right now I just watch the videos, complete all of the available review/practice material for one topic per day. I think what I'm really looking for are some good note taking tips, as right now I'm not really taking any notes, just making sure all of my material is organized to the best of my ability in a series of folders on my desktop.
