I am an amateur chef, but this grilled cheese is 3 Michelin Star quality.
Sometimes fancy cheese can be used, but often they don't have proper melting abilities. I've done some fancy cheddars and they have worked, but the consistency of Kraft American cheese singles is hard to beat. Perfect melt. I serve with Ketchup, but some people just like it plain.
Kraft American is not elite enough, can't be using the food of the commoners.
My girlfriend is a cheese fiend (she is a borderline animal for cheese) and the following grilled cheese is our recipe
Sourdough bread
Mayonnaise on both sides of the bread (not butter)
Lightly brown both sides of bread then remove slices
Kraft Tex Mex/Jalapeno Jack shredded cheese put directly onto pan (srs)
Add slices on top of shredded cheese in pan as it starts to liquify
Add liberal helping of room temperature Balderson's 3y+ Premium Aged Cheddar (this may be a canada only cheese, but its super strong/dense cheddar)
Slice diagonally and serve with ketchup, krinkle cut kettle chips and a coupla dill pickles

Grilled cheese on artisan bread with local cheese and tomato soup hit hard on the ski trips in the mountains.
The Cabot x Jasper Hill Farm clothbound cheddar collab with a good fresh baguette and some Sonoma or Russian River valley pinot noir. However, get some nice sourdough, prosciutto, and some Humboldt Fog goat cheese from Cypress Grove and then you're set.
