From what I read, is there an expectation for Paper LBOs that you don't actually use paper usually? Just mental math.

No, they literally hand you a blank sheet of paper and you have to do the LBO on it. No calculator.
The mental math is kinda difficult and you couldn’t possibly do a full paper LBO in your head - just try one and you’ll see what I mean.
