Deferred MBA/2+2 Profile Evaluation

Hi everyone, was wondering if people could chance me for Harvard 2+2, GSB Deferred, Wharton Moelis, Sloan Early Admission, etc. Would be applying next year while completing a masters, likely in something slightly less STEM-y and more economics focused (which I realise may be a hindrance).
Nationality: Western European
URM: No (white, middle-class background), but do have a disability
Education: Top European STEM school (ETH/Imperial/TUM), natural sciences subject, top 30%, 3.7/4.0 GPA equivalent roughly, notable scholarship when entering university but no awards from the university itself.
GMAT: Not taken yet, expecting 720-750.
Internships: Summer research at HYPSM, Magic Circle law firm (think Allen & Overy, Freshfields, etc.), White-shoe law firm (Paul Weiss, Sidley, etc.), small energy consultancy, and a couple of spring weeks (Big 4 and BB banking). Expecting to intern in a bank's (not BB, but good name) private equity arm next summer on cleantech and would likely want to convert this to a full-time offer. Not sure how much the finance aspect would disadvantage me given that they want unconventional backgrounds.
Extracurriculars: One really strong leadership position of an international charity - won't go into details as would likely give away identity. Limited involvement with an IGO (World Bank, UNDP, etc.). Couple of committee roles in various societies. No particularly notable sports, but play for one of the Union teams at my university. Some cool international voluntary experience.
I'm worried that the private equity and an economics/policy masters (likely a UK target) might undo the interesting STEM profile fit. In that case, should I wait to apply down the road rather than straight out of university? And obviously I still need to get that GMAT score...
