Just curious, do employers still request transcripts to verify education, or do they just do that through background check?
Also, at what stage can I officially leave my GPA off of my resume. Currently a AN1 in IB and looking to lateral.

You wouldn’t be able to leave your gpa off anytime soon. Possibly after year 5 but even around then and especially now employers will always assume the worst and ask about it anyways.
Unless you have below a 3.0, I would highly suggest leaving it on. I don’t have any insight on transcript requests but I also wouldn’t recommend lying about your GPA.

Are test scores also bad? If above 1400 on the SAT you can include that to mitigate and help explain the damage.
Lower than a 3.3? Also school rep can help.
