What do you mean? They’ll ask you to provide them with job update. If they find out you didn’t/are in violation they will probably take you to court and let your current employer know. Most likely your current employer will fire you if you didn’t disclose a non compete.
Wtf lol. I wouldn't recommend OP to do it but the firm you're leaving has no business knowing where you're going or when you're starting. Burden of proof is on their end.
