I'm writing a cover letter for a company-and I have spoken to many employees. One of them however is "Maddie" from HR but I only know "Maddie" 's first name. Can I still mentioned her? I want to mention the HR person, but is that not professional if I am like "John Doe, Jane Smith, Kyle Johnson, and Maddie from HR" ?

I wouldn't mention an HR person, personally, unless you are applying for a position in HR. Honestly I'm not a big fan of name dropping in cover letters at all, but to each his own.
agree with BJ - HR name dropping isnt really beneficial. secondly, your google skills should be good enough to figure out her last name via the interwebs...all entry level positions (e.g. analysts) are basically research b*tches
