Timing of Lateral Start

AN1 planning to jump to a new shop soon once seats start opening up from people collecting their bonuses and leaving.
 

Understanding every situation is unique, what is the ballpark timing between accepting a lateral offer and then starting the new role. Trying to figure out if there’s a chance that I’ll be able to take a couple of weeks (months??) to get back my sanity before throwing myself back into the fire. 
 

FWIW from the previous sentence, I actually don’t mind banking and am grateful for the job/pay/connections - just no denying that we all could use a second to catch our breath every now and then
