What do you do instead of coffee chats in London?
Pretty much I and everyone I know used the phrase “...if you’d be able to grab coffee...” in our emails when networking in person here in the United States.
I wanted to meet up with some people in London later, but as I was writing emails, I remembered that coffee isn’t a thing in the UK.
Perhaps I’m over thinking this, but would I just say something like “...if you’d be able to chat...” or something along those lines?

due to the pandemic, I would just ask for a zoom call or facetime or skype.
I don’t know how much time you’ve spent here, but coffee absolutely is a thing in London.

I grab a coffee with people pretty much 2-3 times daily (before the lockdown) . try to do all my face to face meeting on my feet so can get some steps in. but you should definitely ask ppl to grab coffee , this is a thing here

also we use the word ‘catch up’ for many things. shall we have a catch up .. mostly means off the desk chats
You use “catch up” for initial conversations? I’ve only used that for people I’ve already spoken with.
