How much does transcript matter?

I'm looking to recruit for PE after doing the summer at investment banking. Right now I have the choice to take really easy courses, 3 classes per semester, take some pass-fail and still graduate with honors if I just write a thesis. I'm an econ major, and I don't even have to take more econ classes. My question is, will me taking easy classes and getting As hurt me as opposed to taking more rigorous econ classes? I'm worried when or if they are going to look at the transcript and look at some of the course titles.

If you can take pass-fail I would take atleast 4 courses per semester. Take pass-fail in something you are awful at but would be a nice skill to learn.
Could you take into programming classes? That could be useful or something fun like a pottery/ceramics class. I feel like you should be able to find something useful or fun to study if you have the pass-fail option.
And only taking 4 classes should still give you plenty of time to go to the bars. Especially if going back to intro level stuff which should be easy.
I was engineering but had enough AP coursework to graduate a year early so lightened up but took all sorts of coursework I thought would be fun.... ceramics Econ accounting. Which intro level as a senior we’re easy.
If you finished your major you should absolutely take easy classes, get A's and have a great time during your last year. I'm sure some people will have a different opinion, but I made the jump right out of undergrad and no one cared that I was taking archeology, painting, underwater basket weaving and having as much fun as possible during my senior year. They care about your major and GPA, background/experience and how you perform in interviews. If you have the academic track record in place, no one will fault you for enjoying your last year of no responsibility and complete freedom before getting buried.
