Track to C-Suite at a PE-backed portfolio company? Also, is there even a possibility of switching from operations to a deal team sometime during your career (not that it matters, just wondering)? Also, wondering what recruiting for these roles looks like?

Unlikely. Gotten a few PE Ops looks as a MBA grad (once as a student and in talks now with a small holding company that acts as a micro PE fund). I have ~5 years of work experience and both of these roles were for a particular industry, healthcare.
