One thing to remember about it though is that the reviewers of newer movies are likely more casual and less critical than the people who seek out older movies. A simple rule of thumb is that if you could watch it in the theater then go and write the review, it's probably overrated compared to something you had to seek out and watch at home.
I'm going to go out in left field here and recommend 'Das Boot' (1981) as a sleeper pick. Try to get it in the original German with subtitles if you can, and it needs to be played in the dark and LOUD. (it uses sound to great effect) I'd even classify it more as a psychological thriller than a war movie. 5% of the time the U-Boat is a terrifying killer, and the rest of the time it's the weakest ship at sea, only surviving through stealth. You've never seen a simple"ping" used to such great effect. A number of the reviews are from actual sub crewmen who say "we watch other 'serious' sub movies for laughs, but we feel like this is what our life would've been like 50+ years ago."
Final selling point: If you watch "Beerfest" you might recognize one of the stars.
I like most of the other suggestions as well, by the way with the exception of Gone With the Wind. It drags on for ages and just isn't any fun.

I'm a "cinéphile", Kubrick is the greatest ever but Lynch is currently the best with Paul Thomas Anderson. I'm always disappointed that most people don't know good movies or are more on recent movies that have not often the same impact than the other ones.

yeah they are definitely movies that not everyone has seen, but with some amazing acting, malkovich, damon, and norton in Rounders, and Dafoe in Saints.
So many greats already listed above. My less conventional pick is The Fugitive. I feel like it’s really hard to make a good action movie, most of them are too basic and it gets old. So bonus points for pulling that off.
If you're looking to find some to watch, I recommend taking a look at the old lists of movies nominated for academy awards. Generally some decent options. Some of my favorites:
