How many prior work experiences should you include on your resume? I'm trying to open up room for additional info/skills on the bottom of the resume. So should some blue collar work before college be in there?

As many as are relevant so no, not your "blue collar" experience before college. I would likely leave it at internships and maybe any other jobs you had during school.
