Recently got an offer for 2023 at Adobe for a Digital Consulting Role
Pay is competitive, WLB is just insanely good and benefits are unparred.
I’m really interested in taking this role but feel like if I don’t like it, then it will completely mess up my career track.

It's hard for anyone to answer this without knowing anything about your "career track" and where you want to go. If you're genuinely interested and there's solid upward mobility, then sure take it? What other options are on the table? If you want IB later down the line, you could lateral back or take the MBA route as an associate.
