What if I currently am an Economics major and I have a relatively low cumulative GPA because of my hard science major (low as in Asian fail low) GPA because of that?

They will ask you why this major question during an interview. If you have a solid reason and can explain why science, put your hard science major as your GPA is low.
If by "Asian fail low" you mean that most people wouldnt consider it to be low, then this is a nonissue with banks and more an issue of self perception to banks.
And if you have two majors, why would you not list them both on your resume? I want to know what your degree(s) is(are) in.
