Non Target - May Graduation - Need Advise

I'm a finance student at a midwest non-target school (think state school with 1 kid going to IB each year on a good year). I interned at a small local PE shop between my junior and senior year, have a solid GPA (3.8-3.9), and am extremely involved on campus with a number of leadership positions, competitions etc. I've been focused and persistent on breaking into IB. In the fall I took a trip to NYC and crashed on an alumni's couch for a week to try and source opportunities. I've had interviews with about 10 different banks (boutique and MM) over the course of the school year and ended up with one superday (valuation position not IB). I'm still waiting to hear back. If I don't get the offer, my pipeline is dry as my other potential opportunities were paused/ended due to Covid-19. I have a few options, the first is I can graduate and continue the IB job search , the second is delay my graduation until December and try my hand at recruiting for FT 2021 or I could look at a different sector of finance that could help me eventually break into IB. Any thoughts or recommendations are appreciated.
