As for background, I work in levfin and never really wondered why people use the word quantum to describe the size of the debt tranches until now.

In Latin, it means "how much," and that meaning has carried over into English.
The word "quantum" can be used to refer to the quantity of something (photons, Planck constant, legal damages, etc.).
This is just another example of referring to the quantity of something. People could use other language, but likely use quantum because it makes them feel more sophisticated.
