Bison tenderloin is really good. And one of the leanest pieces of meat you can find while still being tasty. Whole Foods has good bison.

Chicken Thighs - have become really popular popular as of late and for good reason. These are consistently so damn good and blow chicken breast out of the water. Extremely juicy and flavorful, and can hold up to various types of cooking methods.

Pork Ribs - I personally do not think anything even comes close to slow cooked ribs that have been smoked and seasoned properly. It is also pretty easy to tell when ribs have been cooked with effort. Tenderness, bone pull/color, and flavor are all easy indicators.

 

chicken thighs really are amazing. Breasts are easy, but thighs really are not that much more difficult, no brainer imo

  • Haven't even begun to mention fish, but I assume you mean just land animals

tbh if this whole finance thing doesn't work out, I'd really want to work at and then eventually open a butcher shop/takeaway spot, something like this place in Prague. Bourdain went to some place like that in Budapest that looked amazing too, that would be a dream.

I know it's a ton of work, but I really want to learn professional butchering at some point and be more in that space. I've thought about shadowing/working weekends at some places around me, just need to decide whether I want to get serious about it

I've been to Fogo de Chao and wasn't impressed.

Would you be willing to expand on this more? I've heard people brag about the all you can eat component and was thinking of checking it out. 

In terms of the actual question, family friend once made deer and it tasted very good. I also like ribs like you.

Certainly for more routine eating, chicken thighs are a great option as others have pointed out.
