Ok here's what you say, you say " hello, unfortunately, I have taken an offer somewhere else, however, I have a nice young gentlemen who would love to take this offer(and you say my name and refer me)" and then you take the other offer and  I take that offer and than we both are happy :)

Just shoot them an email saying that youre writing to inform them that you've accepted an offer at another firm and that you've enjoyed getting to know them during the process.

Thats it. Thats the email. Don't waste time with a phone call.  Nobody really cares after you've said no, unless you're reneging

The one exception being if you've got a contact there who's really helped you through the process. I'm not talking about just interviewing, but pushed your resume or something
