I'm a sophomore applying for internships for summer 25' and I'm still a bit confused as to what the expectations are for what and how much you should know already before applying for internships. From an inside perspective what do you expect interns to know coming in?

You really don’t need to know a lot. You should know basic finance / accounting stuff that you would learn in classes and technical prep. Other than that the expectations aren’t extremely high.
