Did someone ever read "investment Banking, Valuation, LBO, M&A and IPOs" from Joshua Pearl and Joshua Rosenbaum In pratic cases, does the book really gives you a good understanding to IB?

Yes, it is very helpful. I found an old hardback copy on my building's community book shelf and read it before starting banking. Even on the job, I would reference it at times.
Especially if you're interested in the idea of banking, but aren't exactly sure what it entails, you'll get great benefit from reading the sell-side/buy-side sections.
How did you learn financial modelling? Do you think the book can help you with that?
It comes new with a set of excel models you can access. I haven’t seen them but I’m sure they’re quality. It’s not the cheapest but nothing of the like is.

Really good book and highly reccomend
It's good. Not super detailed but you'd only get that detail actually doing work on the job.
