Is my experience relevant for landing SW/SA London?

I took a gap year due to some personal reasons and ended up getting an apprenticeship role in back office for a top BB in Futures Clearing in the UK. Because of this I decided to take another gap year and finish the apprenticeship (I was really young for my year in school so didn't mind taking another). Although its back office, there's a lot of of MO and FO job roles I do like pulling together margin breakdowns for some of the Ds and MDs in the FO.. etc. By the time I get to uni, I should have 1yr 8mos work experience in this role.

Wondering if this experience will help me land some SA / SW postions for BBs in London when I start Uni in September. The UNI is a top 3 target in the UK and it's a top course.

I did a very similar thing to you but only took 1 gap year and I worked in investing. I also have a handful of friends who did very similar things, and we are at a target. The experience in itself doesn't guarantee interviews but if you have a well-rounded CV including things like uni clubs (this is the most important complementary IMO) or charity work then you have a great shot. To address your question on if it's relevant, it is absolutely relevant as you have been in a large bank dynamic before so culturally and knowledge-wise you have a head start. Every year after your first year it becomes increasingly less relevant purely because of time.
