Major difference at the 3 schools you mentioned. At UNC, ur completely fucked. At Vandy it’s probably fine, see if you can change to economics (both should be in CAS) but doesn’t matter. Washu you still have a shot.
See if you can pick up a nice minor (math, cs, data science)
